A coastal resort favorite
The unofficial national cocktail of Cyprus. The amaro complements the richness of locally made brandies. The amaretto adds a nutty sweetness to bring out woody and grape tones. An optional egg white can be added for a smooth, delicate texture.
Ingredients
metric standard45 ml brandy
10 ml Sicilian amaro
10 ml amaretto
25 ml fresh lemon juice
10 ml simple syrup
Lemon peel (expression)
Cherry (garnish)
Orange slice (garnish)
Egg white (optional)
Preparation
Combine all ingredients in a shaker. If including optional egg white, "dry shake" to activate foam. Add light ice and shake until the ice dissolves. Strain into a double old fashioned rocks glass over a large ice cube. Express a lemon peel. Garnish with a cherry and orange slice.
