Chicha de Piña
Savor tropical freshness
Indulge in rich Latin flavors with a Chicha de Piña. Tropical and complex, this recipe is delightfully unexpected, pairing citrus with woody undertones of nutmeg and allspice.
Ingredients
metric standard45 ml aguardiente
10 ml allspice dram
10 ml pineapple liqueur
15 ml cinnamon syrup
30 ml fresh pineapple juice
15 ml lemon juice
2 dashes aromatic bitters
Pineapple slice (garnish)
Pineapple frond (garnish)
Half salt rim (optional)
Preparation
Combine aguardiente, allspice dram, pineapple liqueur, cinnamon syrup, fresh pineapple juice, lemon juice, and light ice in a shaker. Shake until the ice dissolves. Pour into a hurricane glass. Top with more ice and aromatic bitters. Garnish with a pineapple slice and pineapple fronds.
For cinnamon syrup, toast 5 cinnamon sticks on medium heat until fragrant. Add 1:1 simple syrup and water. Bring to a boil to infuse. Strain all solids. Cool before using.
For pineapple liqueur, if unavailable, substitute with aguardiente and pineapple juice.
