Reimagining the beloved mojito, this drink is inspired by the lively spirit of Colombian and South African street festivals. Popular in both countries, local varieties of passionfruit are called “granadillas” in South Africa and “maracuyá” in Colombia.
Ingredients
metric standard25 ml fresh lime juice
10 mint leaves
10 ml sugar cane syrup
60 ml aguardiente
15 ml passionfruit (granadilla/maracuyá) liqueur
Sparkling water (on top)
3 dashes aromatic bitters
Mint sprig (garnish)
Preparation
Add lime juice, mint, and sugar cane syrup into a glass. Gently muddle mint, add aguardiente, passionfruit liqueur, and fill half the glass with crushed ice. Mix all ingredients with a swizzle stick. Top with more crushed ice, sparkling water, and 2-3 dashes of aromatic bitters. Garnish with mint.
