Lulo Highball
An exotic elixir
The classic highball is an endless canvas for creative mixologists around the world. Our Lulo Highball substitutes whiskey with aguardiente, Colombia's beloved anise-flavored spirit. It also incorporates lulo, a native Colombian fruit with a tart, tangy flavor reminiscent of kiwi or citrus.
Ingredients
metric standard60 ml aguardiente (or substitute with rhum agricole or white rum from the Caribbean)
25 ml lulo cane syrup (1:1 lulo juice to cane syrup)
15 ml fresh lime juice
1/2 ripe lulo (or substitute with kiwi)
Sparkling water (on top)
Lemon slice (garnish)
Preparation
Combine all ingredients, except sparkling water, in a shaker. Muddle ripe lulo. Add 1 scoop of ice and shake. Pour into a Collins glass without straining the liquid. Top with sparkling water. Garnish with a lemon slice.
