A dark-brewed delight
Carajillos are popular after-dinner coffee cocktails across Latin America, often using brandy, mezcal, or local coffee liqueurs. Paired with Colombian Arabica espresso, the rum and dark beer provide a bold, robust body and a slightly bitter finish.
Ingredients
metric standard45 ml aged rum
30 ml Licor 43
30 ml espresso
10 ml vanilla-infused simple syrup
90 ml dark-brewed porter (on top)
Grated coffee beans (garnish)
Preparation
Combine aged rum, Licor 43, espresso, vanilla-infused simple syrup, and light ice in a shaker. Shake until the ice dissolves. Strain into a tall glass and top with more ice. Lightly pour the dark-brewed porter on top. Garnish with grated coffee beans.
For vanilla-infused simple syrup, add 1:1 simple syrup and water to a pot. Bring to a simmer. Add 10 ml vanilla extract once sugar is dissolved. Cool before using.
