Soju Sour
Peru and South Korea’s refreshing duet
The Soju Sour is a delightful fusion of Peruvian and South Korean flavors. Frothy and bright, this cocktail balances dried fruit and subtle earthy notes. A riff on the Pisco Sour—a classic cocktail from Peru—this version adds the Korean spirit soju, known for its smooth texture and clean finish.
Ingredients
metric standard30 ml soju
30 ml pisco
25 ml yuzu juice
25 ml lucuma syrup
1 egg white
Citrus peel (optional, expression and garnish)
Preparation
Combine all ingredients into a mixing glass. “Dry shake” (shake without ice) to froth the egg white and activate foam. Add ice and shake vigorously. Strain into a coupe glass. Optional: Express a citrus peel and add onto the glass.
For lucuma syrup, cut lucuma into small pieces. Sous vide with 1:1 simple syrup for 3 hours at 40.5°C. Strain all solids. Cool before using.
