From foam to frost
Peru's iconic cocktail. Tart, sweet, and incredibly smooth, it starts with a cloud-like foam that turns into an icy cold sip. The use of pisco and lime reflect the cultural fusion that defines Peruvian culture.
Ingredients
metric standard60 ml Peruvian pisco
30 ml key lime juice (or substitute with lemon juice)
30 ml simple syrup
30 ml egg white
2 dashes of aromatic bitters (optional)
Lemon peel (expression and garnish)
Preparation
Combine pisco, key lime juice, simple syrup, and egg white in a shaker. “Dry shake” to activate foam. Add ice and shake vigorously until the ice dissolves. Pour into a coupe glass. Top with 2-3 dashes of bitters. Express a lemon peel and add to glass.
